- 1 lb. Natural Chicken Breasts
- 1 Tbsp olive oil
- 1 large tomato, sliced
- 1 cup spinach
- 4 slices of mozzarella
- 4 ciabatta buns
- balsamic vinegar
- salt and pepper
Instructions:
- Add olive oil to an iron skillet and bring to a medium heat. Season both sides of the chicken breasts with salt and pepper. Lay the pieces into the skillet and cook each side 3-4 minutes or until chicken is cooked. In the last minute of cooking lay down a slice of cheese onto each breast.
- When chicken is done remove from the pan and place ciabatta buns down to toast in the skillet.
- Start by layering the sandwich with bun, chicken, tomato, drizzle with balsamic vinegar, top with spinach and then the other ciabatta bun.
