Caprese Chicken Sandwich

  • 1 lb. Natural Chicken Breasts
  • 1 Tbsp olive oil
  • 1 large tomato, sliced
  • 1 cup spinach
  • 4 slices of mozzarella
  • 4 ciabatta buns
  • balsamic vinegar
  • salt and pepper


  1. Add olive oil to an iron skillet and bring to a medium heat. Season both sides of the chicken breasts with salt and pepper. Lay the pieces into the skillet and cook each side 3-4 minutes or until chicken is cooked. In the last minute of cooking lay down a slice of cheese onto each breast.
  2. When chicken is done remove from the pan and place ciabatta buns down to toast in the skillet.
  3. Start by layering the sandwich with bun, chicken, tomato, drizzle with balsamic vinegar, top with spinach and then the other ciabatta bun.
