1/4 cup cashews
2 cups mixed greens or baby spinach
1 1/2 cups red grapes, halved
1/4 cup mayonnaise
1/4 cup sour cream
1 1/2 teaspoons fresh lemon juice
1/2 teaspoon salt
1/4 teaspoon black pepper
Instructions:
Shred or chop chicken into a large bowl. Add cashews, red grapes and greens. Whisk together the mayonnaise, sour cream, lemon juice, salt, and pepper in a small bowl.
Pour
over salad and toss to coat.
Serve immediately.
